Flavoured burnt Cream

Ingredients

  • 250 g of MONIN syrup
  • 500 g of whole milk
  • 500 g of UHT cream
  • 10 egg yolks

Instructions

  1. Whisk together the milk and UHT cream in a saucepan
  2. In a separate bowl, whisk together the egg yolks and MONIN syrup until well combined
  3. Heat the milk and cream mixture until it just begins to boil
  4. Remove from heat and slowly pour the hot milk and cream mixture over the whisked egg yolks and syrup, stirring constantly
  5. Pour the mixture into flat ramekins
  6. Bake in the oven at 100°C for 1 hour
  7. Sprinkle with brown sugar and caramelize under a grill or refrigerate for 2 hours before serving
