Red Berries Cheese Cake
Ingredients
Biscuit Base,
31 GM Butter
125 GM Biscuit
MONIN Berry Jelly
125 ML MONIN Red Berries Fruit Mix
25 GM Water
2 Gelatin Sheets
Baked Cheesecake Mixture
750 GM Cream Cheese
200 GM Sugar
19 GM Corn Flour
10 GM Lemon Zest
125 GM Egg.
Instructions
For the Biscuit Base:
Mix crushed biscuits, brown sugar and melted butter. Press into the base of a lined springform pan chill until firm
For the Cheesecake Batter:
Beat cream cheese until smooth add sugar, mix well
Mix in corn flour and lemon zest
Add eggs gradually while mixing on low speed to avoid air bubbles
Pour over chilled base
Bake at 150°C for 45–55 minutes until just set with a slight jiggle in the center, cool in oven with door ajar then chill
For the MONIN Red Berry Layer:
Combine MONIN Red Berries Fruit Mix and water Bring to simmer
Add bloomed gelatine sheets
Pour over chilled cheesecake and set in fridge
Decorate with fresh raspberries cherries or blueberries and optional glaze
