Yuzu Fruit Tart
Ingredients
400 g Yuzu MONIN Fruit
100 g MONIN Rantcho Lemon Concentrate
30 g cornstarch (corn flour)
5 whole eggs
150 g butter
Instructions
Preheat the oven to 82°C (180°F)
In a saucepan, combine the eggs, Yuzu MONIN Fruit, MONIN Rantcho Lemon Concentrate, and cornstarch
Cook the mixture over low heat, stirring constantly, until it thickens like a custard (reaching about 82°C or 180°F)
Remove from heat and add the butter at room temperature
Stir until the butter is completely incorporated
Pour the mixture into a pre-baked and cooled tart crust
Decorate with fresh raspberries on top
Chill in the refrigerator for at least 2 hours before serving
