- 400 g Yuzu MONIN Fruit
- 100 g MONIN Rantcho Lemon Concentrate
- 30 g cornstarch (corn flour)
- 5 whole eggs
- 150 g butter
Preparation
- Preheat the oven to 82°C (180°F)
- In a saucepan, combine the eggs, Yuzu MONIN Fruit, MONIN Rantcho Lemon Concentrate, and cornstarch
- Cook the mixture over low heat, stirring constantly, until it thickens like a custard (reaching about 82°C or 180°F)
Remove from heat and add the butter at room temperature
- Stir until the butter is completely incorporated
- Pour the mixture into a pre-baked and cooled tart crust
- Decorate with fresh raspberries on top
- Chill in the refrigerator for at least 2 hours before serving
