Yuzu Fruit Tart

Ingredients

  • 400 g Yuzu MONIN Fruit
  • 100 g MONIN Rantcho Lemon Concentrate
  • 30 g cornstarch (corn flour)
  • 5 whole eggs
  • 150 g butter

Instructions

  1. Preheat the oven to 82°C (180°F)
  2. In a saucepan, combine the eggs, Yuzu MONIN Fruit, MONIN Rantcho Lemon Concentrate, and cornstarch
  3. Cook the mixture over low heat, stirring constantly, until it thickens like a custard (reaching about 82°C or 180°F)
  4. Remove from heat and add the butter at room temperature
  5. Stir until the butter is completely incorporated
  6. Pour the mixture into a pre-baked and cooled tart crust
  7. Decorate with fresh raspberries on top
  8. Chill in the refrigerator for at least 2 hours before serving
